Zero SmartPoints Salsa
This is a “starter recipe”, feel free to increase quantities to your taste (or jar size!)
Makes one large Kilner jar
3 large vine tomatoes, roughly chopped (or use cherry tomatoes)
½ red onion, peeled and roughly chopped
Bunch of fresh coriander
Seasoning (sea salt & cracked black pepper, if possible)
Good pinch of granulated sweetener
Juice of ½ lime (or more: to your own taste)
Few Jalapeno Peppers (from a jar)
Note: you can vary this by adding roast red peppers, garlic, etc., to the mix.
Put all ingredients into a small food processor (or blender) and pulse/blitz until you get the consistency you want.
Transfer to a lidded jar.
Keeps in the fridge for approx. one week.
