Yellow Thai Curry
Calorie controlled cooking spray
500g (1 lb 2oz) skinless turkey breast fillets, cut into small cubes.
4 tablespoons Thai yellow curry paste
400ml can reduced fat coconut milk
175g pack baby corn, halved lengthways
100g (3 ½ oz) fine green beans, trimmed and each cut into 3 pieces
150g (5 ½ oz) cherry tomatoes, halved
zest and juice of a lime
A few fresh basil leaves, to serve
- Spray a large lidded non stick saucepan with the cooking spray and cook the turkey pieces and curry paste for 5 minutes until browned all over.
- Pour in the coconut milk and simmer, covered for 10 minutes. Add the baby corn and beans and cook for 5 minutes until they are tender.
- Stir in the tomatoes, lime juice and zest. Scatter over the basil leaves and serve in bowls immediately.
Try this: Try replacing the turkey with 500g (1 lb 2 oz) raw, diced skinless boneless chicken breasts for the same SmartPoints values per serving. You could use red or green Thai Curry paste instead of yellow and the SmartPoints values will be the same.
If you can find Thai basil leaves in a local Chinese supermarket, you could use them instead of the everyday basil you find in the major supermarkets.
