Turkey Club Sandwich
3 slices calorie controlled brown bread, such as Weight Watchers Brown or white bread
4 smoked bacon medallions
2 tablespoons quark
½ teaspoon Dijon mustard, or more, to taste
A squeeze of lemon juice, or more, to taste
75 g (2¾ oz) sliced skinless turkey breast
1 large tomato, sliced thinly
Crisp lettuce, such as Little Gem or Iceberg
Salt and freshly ground black pepper
- Lightly toast the bread on both sides and grill the bacon. Meanwhile, mix together the quark, mustard, lemon juice and a little seasoning to taste, adding more mustard or lemon if you like. When the bread is toasted, spread the quark mixture on 2 slices.
- Divide the turkey between the two slices, then top with the grilled bacon, followed by the tomato and lettuce. Season again to taste. Stack one slice on top of the other, and top with the final slice of bread. Cut the sandwich in half on the diagonal and put a cocktail stick through each half to hold it together.
Instead of the quark mixture, add some mayonnaise using SmartPoints values from your allowance.
If you prefer, use a brown sandwich thin in place of the three slices of bread and put all the filling between the two slices.
