Egg-cellent Cauli Fried Rice

1 bag of Green Isle Cauliflower Rice
1/2 red pepper & yellow pepper roughly chopped
1/2 white onion, finely chopped
2 cloves of garlic finely chopped
50g mushrooms, sliced
80g (3 tbsp) sweetcorn
80g (3 tbsp) frozen peas
100g broccoli
1 tbsp soy sauce
1 egg
1 skinless chicken fillet, previously prepared from fresh, and shredded.


  1. Spritz a sauce pan with spray oil and add the cauliflower, garlic and onion.
    Cook for 2 minutes until softened.
  2. Add in the peppers, mushrooms, sweetcorn and peas & cook for 1 minute.
  3. Create a well in the centre of the pan, and add the egg. Allow to cook through and then “scramble” slightly before mixing throughout the cauliflower mixture.
  4. Once combined, add the soy sauce, stir and serve.
  5. Season to taste.

I became a coach in 2016 and adore sharing my love for healthy eating with my members. Being part of their journey is a privilege! This recipe is my go to quick lunch/dinner as it takes so little time and is zero points! A quick tip is to prepare your chicken breast in advance. I cook a few chicken breasts at a time and keep them in the fridge so I can throw them into a quick meal!
