Egg-cellent Cauli Fried Rice
Coach Amy shares her favourite WW Flex® recipe, packed full of zero heroes and full of flavour. And best of all, it is zero Points®!
1 bag of Green Isle Cauliflower Rice
1/2 red pepper & yellow pepper roughly chopped
1/2 white onion, finely chopped
2 cloves of garlic finely chopped
50g mushrooms, sliced
80g (3 tbsp) sweetcorn
80g (3 tbsp) frozen peas
1 tbsp soy sauce (only 1 tsp to make it No Count)
1 skinless chicken fillet, previously prepared from fresh, and shredded.
- Spritz a sauce pan with spray oil and add the cauliflower, garlic and onion.
Cook for 2 minutes until softened.
- Add in the peppers, mushrooms, sweetcorn and peas & cook for 1 minute.
- Create a well in the centre of the pan, and add the egg. Allow to cook through and then “scramble” slightly before mixing throughout the cauliflower mixture.
- Once combined, add the soy sauce, stir and serve.
- Season to taste.

This recipe is my go to quick lunch/dinner as it takes so little time and is zero points! A quick tip is to prepare your chicken breast in advance. I cook a few chicken breasts at a time and keep them in the fridge so I can throw them into a quick meal!
